Stumbling along

Hi, I haven't been here in a long time.  Far too long!  To cut a long story short I have health issues, but at long last I feel that I am on the return to good health.  I have made some big changes in my lifestyle and hopefully that will lead to good health.

The main area for change for me is diet.  The changes has come about slowly.  In June I developed a severe case of Bells Palsy and was unable to swallow and use the right side of my face.  I now have the use of some of the muscles but it is a long slow slog!  For the last 2 months I have only been able to eat mashed veges and soft scrambled eggs and fish.  To say the least I dont want to look at another egg or steamed fish!  One good thing about this is the amount of weight I was losing, but the doctors were worried that I was losing too fast and that I was not getting enough protein. (I am lactose intolent so that source was out for me)  So they sent me to the hospital dietitian.

After looking at what I had eaten over the last week, he said you know you are practically vegan have you considered going vegan consciously?  He felt that if I followed a proper vegan diet I would do well on it.  I went home and gave it a lot of thought.  I have vegan friends I spoke to them and they felt that I should give it a go.

They have given me the guidelines and I have been trolling the net looking for recipes that I could try.  So this is now going to be the focus of this blog my stumbling to good health.

One of my vegan friend took me shopping yesterday and I purchased some of the essentials. Tofu, vegetable galore, grains and fruit.

Julie had given me a recipe for spinach quiche using tofu in place of eggs.  Today I made it and it was divine, a lot lighter than traditional quiche and not so cheesy, but is fine by me.

 
With it I had a mushroom and barley soup that I had cooked in the slow cooker a very satisfying meal.

Tonight, I will have a fruit salad (fresh pineapple, bananas and oranges with a spoon of coconut yoghurt. 

I have enough of the soup and quiche for a few days meals.  So, over the next few days I am going to make a menu plan, well sort of really just a list of possible meals.
